Sarsfield Sour

A variation on the whiskey sour. The elderflower and freshly squeezed grapefruit give the drink a floral bite, the peychauds bitters add a hint of sophistication and complexity, while the use of egg white and a hard shake ensure a silken velvety mouthfeel. Minimal ingredients and methods allow the light yet oaky character of The Wild Geese Rare Irish Whiskey to develop on the palate – hence straight up and minimal garnish.

  • 50ml The Wild Geese Rare Irish Whiskey
  • 15ml Freshly squeezed grapefruit juice
  • Dash Peychauds bitters
  • 10ml Elderflower cordial
  • 20ml Pasteurised egg white

 

Shake all ingredients with ice and strain into a chilled cocktail glass. Dot 3 drops of bitters on top.

Sixteen Ninety One

A long, light refreshing cooler with a pale lavender colour. The citron notes of the Cartron Parfait Amour and the overt floral notes of the elderflower lift and balance the lighter green fruit character of The Wild Geese Classic Blend Irish Whiskey. Medium sweet pressed apple juice adds length without subverting the subtle, yet distinct flavour notes.

  • 50ml The Wild Geese Classic Blend Irish Whiskey
  • 10ml Cartron Parfait Amour
  • 65ml Medium sweet cloudy apple juice
  • 10ml Elderflower cordial
  • 5ml Sugar syrup

 

Shake all ingredients except parfait amour with ice and strain over crushed ice, drizzle parfait
amour over the top. Garnish with fresh orange zest and serve in a highball or sling glass.

The Quiet American

Astringent fruit flavours married with rich cocoa and vanilla to produce an elegant, textured Martini style cocktail. The vanilla complements the oak notes of The Rare Irish Whiskey, while the rhubarb and lime brings balance to the cocoa sweetness and a zing to the palate.

  • 50ml The Wild Geese Rare Irish Whiskey
  • 1 bar spoon rhubarb and vanilla jam
  • 10ml Fresh lime juice
  • 20ml Crème de Cacao (white)
  • 1 bar spoon vanilla sugar

 

Shake all ingredients with ice and fine strain into chilled cocktail glass. Garnish with a lime wedge.

Untamed Punch

  • 300 ml The Wild Geese Classic Blend Irish Whiskey (14oz)
  • 1000 ml Cloudy / pressed apple juice (litre)
  • 100ml dry white wine (4oz)
  • 2 clove studded full orange zests
  • 4 small ginger thumbnails
  • 1 bay leaf
  • 1 tablespoon brown sugar
  • Dashes of Angostura bitters to taste

 

Place all ingredients in a large pan and simmer until the sugar has dissolved and liquid is warmed through.

Transfer entire contents to a punchbowl.

Serve with a ladle into heatproof glasses (approx 175ml) and garnish with a fresh whole cinnamon stick.

Gentleman of Ireland

Serious digestif style cocktail. The vermouth has a tannic dryness which brings an elegantly balanced counterpoint to the sweet, woody character of The Wild Geese Rare Irish Whiskey, while the Chambord introduces a ripe, red fruit note.

  • 50ml The Wild Geese Rare Irish Whiskey
  • 15ml Noilly Prat Rouge
  • 5ml Chambord

 

Stir all ingredients in a boston glass with ice and strain into a chilled tumbler.

  • 10ml (1 tsp) Cointreau

 

Build all ingredients over cubed ice in a tumbler

  • 50ml The Wild Geese Classic Blend Irish Whiskey
  • 35ml Oaked Chardonnay
  • 25ml Cloudy Apple Juice
  • 10ml Simple Syrup

 

Batch make the recipe and warm in a pan, serve in a heatproof glass

Cafe Creme

  • 50ml The Wild Geese Classic Blend Irish Whiskey
  • 50ml double cream
  • Double espresso
  • 50ml hot water
  • 30ml Maple syrup
  • Vanilla pod
  • 1/2 spoon cinnamon powder
  • Cinnamon stick / nutmeg

 

Put 20ml of Maple Syrup into latte glass. Add a large cinnamon stick then pour double expresso into glass. Add 50ml of The Wild Geese Classic Blend. Using a shaker, shake 50ml double cream with 1 vanilla pod. Layer the cream over the espresso coffee carefully, using the back of a bar spoon. Garnish with grated nutmeg.

CLASSIC MOJITO

Ingredients
2 parts of The WIld Geese Golden Rum
1 part of fresh lime juice
Half part of sugar syrup
Soda Water
Fresh mint

 

Garnish
Fresh mint sprig

Method
Pour lime, sugar, mint and rum into a highball glass, add a splash of soda and cracked ice. Gently stir than top up with more ice, finally garnish with mint sprig.
